Sunlight streamed through the branches of a leafy tree as we laughed and wobbled through standing and arm balances, stretches and a soothing relaxation at the end. These young girls were an absolute pleasure to teach. They were brimming with energy and up for anything! Having a whole group of young people in a class beings a fresh dynamic to the experience of teaching. It was much more like playing; I had so much fun!!

For dinner tonight I was really craving nuts and sweetness, but I didn’t want to sit down and scoff an expensive and heavy “fix hunger NOW” meal of nuts and dried fruits as I’ve done in the past! So I decided to incorporate what I was craving into a healthy salad and voila.. it was delicious, nutritious and satisfying whilst still giving me the crunchy texture and sweet flavour I desired.

This is a really rich, creamy dessert that is made of whole foods and is high in valuable goodies your body likes. Drinking the chilled, sweet coconut water to kick off your day is one of my great loves and reminds me of mornings on a tropical island in Thailand! You can scoop the flesh out after drinking the coconut and store it in the fridge to make the mousse later.
