Raw Coconut Icecream Madness!

Over the last few weeks I have been diving into raw coconut icecream! As an alternative to dairy- and soy-based icecreams, these are not at all factory-processed, had chemicals or preservatives added to them, are clogging or phelgm-forming and are generally cheaper (and more fun!) to make.
I indulge in dessert on a daily basis and highly recommend these scrummy icecreams to anyone who wants to boost their levels of life force energy, whilst maintaining a healthy weight and not feeling bogged down afterwards. These are best eaten after a raw, avocado-based meal (such as the Easy Creamy Avocado Salad) or a raw, nut-based meal (like Crunchy n’ Sweet Salad or Dill Date Delish) or after eating fresh fruit (i.e. you can have icecream for breakfast!)
The secret ingredient is Irish Moss, a species of red algae containing the natural thickener, carrageenan. It is very high in protein and minerals such as iodine and sulfur, and you can buy it at health food shops. It’s fine to make the icecream without it but I found it imparts a sensational smooth creamy texture to the icecream, and who doesn’t need more iodine?! Be warned, however – Irish moss needs to be soaked overnight before use, it will expand substantially, and the water will have a sea-odour afterwards! Just rinse it and throw what seaweed you need in the blender, you won’t smell it in the end product. And afterall, what’s making icecream without a little stinky adventure? Trust me the end result is worth the stench
Using a high-speed blender, and stirring with a spoon when necessary, blend together any of the groups of yummy things below to replicate the yummy concoctions we came up with, or add your own stuff and let your imagination run wild! When it’s blended into a smooth consistency that satisfies your every desire, put it into a container and let it set in the freezer for at least a couple of hours.
Enjoy these yummy recipes and serve the icecream with a raw dessert such as chocolate avocado pie (courtesy of my amazing friend Caitlin who makes the best raw chocolate pie I have ever had, period) or a nut-based dessert such as Cinnamon Apple-Pear Pie with Pecan-Date crust.
Matcha too Much
- meat of 2 young green coconuts, frozen if possible
- 3 tablespoons soaked and rinsed Irish Moss
- water to blend
- 2 teaspoons green tea powder, or matcha powder, available from asian grocery stores
- 2-3 tablespoons raw honey
Shy Chai Date
- meat of 2 young green coconuts, frozen if possible
- 3 tablespoons soaked and rinsed Irish Moss
- water to blend
- 8-12 dates, pitted and chopped
- 1 teaspoon vanilla essence
- 1 teaspoon chai spices – cinnamon, cardamon, cloves, nutmeg powder in roughly equal portions
Strawberry Kaffir Lime Leaf Layover
- meat of 2 young green coconuts, frozen if possible
- 3 tablespoons soaked and rinsed Irish Moss
- water to blend
- 8-12 dates, pitted and chopped
- 1/2 punnet fresh strawberries
- 1 kaffir lime leaf, very thinly sliced
Chocolate Basil Party
This goes a step above and beyond chocolate mint icecream!
- meat of 2 young green coconuts, frozen if possible
- 3 tablespoons soaked and rinsed Irish Moss
- water to blend
- 8-12 dates, pitted and chopped
- 3 teaspoons raw cacao powder
- 1 teaspoon vanilla essence
- 1 teaspoon chai spices – cinnamon, cardamon, cloves, nutmeg powder in roughly equal portions
- 2 fresh basil leaves, very thinly sliced
Walnut Honey Royalty
A very classy, posh and proper icecream that would impress your boyfriend’s mum (I’m sure)
- meat of 2 young green coconuts, frozen if possible
- 3 tablespoons soaked and rinsed Irish Moss
- water to blend
- 8-12 dates, pitted and chopped
- 3 tablespoons walnuts
- 1 teaspoon vanilla essence
- 1 teaspoon chai spices – cinnamon, cardamon, cloves, nutmeg powder in roughly equal portions
- honey and chopped walnuts to drizzle over the top after placing into a classy container for your boyfriend’s mum

Hey Vee,
you can get young green coconuts, with the green outer casing already removed from it, from Coles and Woolies supermarkets in the cold fresh produce section. They can be $3 each at their most expensive but the other week I found a Coles where they were selling them for less than $2. If you don’t find them there, ask at your local fruit and veg shop and get the grocers to order them in for you… they are heavenly and so worth it!

Just bought the coconuts and ….:))))
They are so yum – drank the juice after a ride and kept the flesh for delish dessert making! I only wish they were bigger (also wish i had a coconut-friendly knife!)

They are my number one favourite thing to eat/drink in the world
A cold coconut after a long hot ride is something everyone should experience at least once in their lifetime. More often if possible
A machete/big heavy rectangular knife is what you need. Be careful and practise… you will get the hang of it eventually!
