This is a really rich, creamy dessert that is made of whole foods and is high in valuable goodies your body likes. Drinking the chilled, sweet coconut water to kick off your day is one of my great loves and reminds me of mornings on a tropical island in Thailand! You can scoop the flesh out after drinking the coconut and store it in the fridge to make the mousse later.
